Having spent time in some of the finest kitchens and in the company of chefs like Michel and Sébastien Bras***, Paul and Marc Heaberlin***, and strengthened by his many trips to Japan, Thailand, and Taiwan as well as several years in Morocco, Matthieu has maintained a cuisine with a strong identity, rich in flavours and defined tastes. Gault and Millau’s ‘Young Talent’ in 2009 and ‘Future Great’ in 2014, Matthieu earned his first Michelin star in 2009 and has kept it ever since.THE STORY
