Passed in big houses, in contact with cooks like Michel and Sébastien Bras ***, Paul and Marc Heaberlin *** and with many experiences in Japan, Thailand, Taiwan or many years in Morocco, Matthieu has kept the taste of a highly identity-based cuisine, rich in flavors and very distinct tastes.
